A chat with the owner of American Cheese, Erin Nicosia

After finding much success at the , Erin Nicosia decided to fulfill her dream and open her own shop. in West Sayville has been open for a little under a year. Patch got to know Erin and her shop and little better…

What’s your Sayville connection?

I grew up in Sayville, not too far from where my shop is now. I loved growing up here, going to school here, going to the beach in the summer… I’ve always felt connected to this community.

What do you love about Sayville?

I love so many things about Sayville. I love being on the water the most. Growing up spending as much time on the Great South Bay as I did fostered a deep love for the marine environment and all things nautical. We have a charming village with fabulous shops and restaurants, we have a gateway to beautiful Fire Island, and warm and friendly residents that truly care about their town.

What makes your shop a unique visit in Sayville?

I wanted to bring something new and exciting to town. Take a simple thing like cheese…something just about everybody loves and eats with most meals, and introduce people how different I can be than what they are used to. Get it fresh and straight from the farm, made by the same hands that milked the animal, the way it used to be done. Take out the factories and the processing, and you’re left with a beautifully crafted piece of art. The difference is remarkable and the flavor unsurpassed. These cheeses are amazing on their own because when you take the time to make something by hand, it becomes the star of the plate. But incorporating artisanal cheeses into everyday dishes turns them into something extraordinary.

In 10 years where do you think Sayville will be?

I’d like to see more small businesses like mine in town, bringing new things and sparking new interests with different ideas. By supporting small businesses and local artisans we can ensure the village of Sayville will continue to be a wonderful place to enjoy.
